Ingredients

1 cup whole wheat flour
1 cup jaggery
1 cup water
1 tablespoon ghee
1/2 teaspoon cardamom powder
1/4 teaspoon fennel seeds
1 pinch salt
oil for deep frying

Instructions

  1. 1 In a pan, add jaggery and water, then heat until the jaggery dissolves completely. Let it cool slightly.
  2. 2 In a mixing bowl, combine whole wheat flour, cardamom powder, fennel seeds, and a pinch of salt.
  3. 3 Gradually add the jaggery syrup to the flour mixture, stirring continuously to form a smooth, lump-free batter.
  4. 4 Heat oil in a deep frying pan over medium heat.
  5. 5 Once the oil is hot, pour small ladlefuls of the batter into the oil.
  6. 6 Fry the khajoor until they are golden brown and crispy on both sides.
  7. 7 Remove the fried khajoor and drain on paper towels to remove excess oil.
  8. 8 Serve warm.

Tips

Ensure the oil is not too hot to prevent the khajoor from burning. Adjust the consistency of the batter with water if needed.
