Ingredients
| 1 cup | whole wheat flour |
| 1 cup | jaggery |
| 1 cup | water |
| 1 tablespoon | ghee |
| 1/2 teaspoon | cardamom powder |
| 1/4 teaspoon | fennel seeds |
| 1 pinch | salt |
| — | oil for deep frying |
Instructions
- 1 In a pan, add jaggery and water, then heat until the jaggery dissolves completely. Let it cool slightly.
- 2 In a mixing bowl, combine whole wheat flour, cardamom powder, fennel seeds, and a pinch of salt.
- 3 Gradually add the jaggery syrup to the flour mixture, stirring continuously to form a smooth, lump-free batter.
- 4 Heat oil in a deep frying pan over medium heat.
- 5 Once the oil is hot, pour small ladlefuls of the batter into the oil.
- 6 Fry the khajoor until they are golden brown and crispy on both sides.
- 7 Remove the fried khajoor and drain on paper towels to remove excess oil.
- 8 Serve warm.
Tips
Ensure the oil is not too hot to prevent the khajoor from burning. Adjust the consistency of the batter with water if needed.
