Ingredients
| 500 grams | pork belly |
| 1 tablespoon | mustard oil |
| 1 | large onion, sliced |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 2 pieces | green chilies, slit |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | black pepper powder |
| 1 cup | water |
| — | salt to taste |
| 1 handful | fresh coriander leaves, chopped |
Instructions
- 1 Cut the pork belly into bite-sized pieces and set aside.
- 2 Heat mustard oil in a pan over medium heat until it starts to smoke.
- 3 Add the sliced onions and sauté until they turn golden brown.
- 4 Add the minced garlic, ginger, and slit green chilies, and sauté for another minute.
- 5 Add the pork pieces to the pan and stir-fry until they are browned on all sides.
- 6 Sprinkle turmeric powder, red chili powder, black pepper powder, and salt over the pork and mix well.
- 7 Pour in the water, cover the pan, and let it simmer on low heat for about 20-25 minutes, or until the pork is tender.
- 8 Remove the lid and cook on high heat to evaporate any excess liquid, stirring occasionally.
- 9 Garnish with chopped coriander leaves before serving.
Tips
For a more authentic flavor, use smoked pork if available.
