Ingredients
| 1/4 cup | basmati rice |
| 4 cups | whole milk |
| 1/4 cup | sugar |
| 1/4 teaspoon | cardamom powder |
| 2 tablespoons | chopped almonds |
| 2 tablespoons | chopped cashews |
| 2 tablespoons | raisins |
| 1 tablespoon | ghee |
| — | saffron strands (a pinch) |
Instructions
- 1 Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water afterward.
- 2 In a heavy-bottomed pan, bring the milk to a boil, stirring occasionally to prevent it from sticking to the bottom.
- 3 Add the soaked and drained rice to the boiling milk.
- 4 Cook on a low flame, stirring frequently, until the rice is completely cooked and the milk thickens (about 30 minutes).
- 5 Add sugar and cardamom powder to the mixture and stir until the sugar dissolves completely.
- 6 In a small pan, heat ghee and fry the almonds, cashews, and raisins until golden brown. Add them to the kheer.
- 7 Add a pinch of saffron strands to the kheer and mix well.
- 8 Simmer for another 5 minutes, then remove from heat.
- 9 Serve warm or chilled, as desired.
Tips
For a richer flavor, you can use a mix of whole milk and condensed milk.
