Ingredients

1/2 cup basmati rice
1 liter full-fat milk
1/4 cup sugar
2 tablespoons ghee
1/4 teaspoon cardamom powder
10-12 cashew nuts
10-12 raisins
1 pinch saffron strands
salt to taste

Instructions

  1. 1 Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. 2 In a heavy-bottomed pan, bring the milk to a boil.
  3. 3 Add the soaked and drained rice to the boiling milk and stir well.
  4. 4 Cook on a low flame, stirring occasionally, until the rice is cooked and the milk has reduced to a creamy consistency.
  5. 5 Add sugar and a pinch of salt, and continue to cook for another 5-7 minutes.
  6. 6 In a separate small pan, heat ghee and fry the cashew nuts and raisins until golden brown. Set aside.
  7. 7 Add the cardamom powder and saffron strands to the rice mixture and stir well.
  8. 8 Garnish with the fried cashew nuts and raisins before serving.

Tips

For a richer flavor, use a mix of milk and condensed milk.
