Ingredients
| 1/2 cup | basmati rice |
| 1 liter | full-fat milk |
| 1/4 cup | sugar |
| 2 tablespoons | ghee |
| 1/4 teaspoon | cardamom powder |
| 10-12 | cashew nuts |
| 10-12 | raisins |
| 1 pinch | saffron strands |
| — | salt to taste |
Instructions
- 1 Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
- 2 In a heavy-bottomed pan, bring the milk to a boil.
- 3 Add the soaked and drained rice to the boiling milk and stir well.
- 4 Cook on a low flame, stirring occasionally, until the rice is cooked and the milk has reduced to a creamy consistency.
- 5 Add sugar and a pinch of salt, and continue to cook for another 5-7 minutes.
- 6 In a separate small pan, heat ghee and fry the cashew nuts and raisins until golden brown. Set aside.
- 7 Add the cardamom powder and saffron strands to the rice mixture and stir well.
- 8 Garnish with the fried cashew nuts and raisins before serving.
Tips
For a richer flavor, use a mix of milk and condensed milk.
