Ingredients
| 1 cup | leftover khichdi |
| 1 cup | gram flour (besan) |
| 1 small | onion, finely chopped |
| 1 small | green chili, finely chopped |
| 2 tablespoons | fresh coriander leaves, chopped |
| 0.5 teaspoon | red chili powder |
| 0.5 teaspoon | cumin seeds |
| 0.5 teaspoon | garam masala |
| — | salt to taste |
| — | oil for deep frying |
Instructions
- 1 In a mixing bowl, combine the leftover khichdi and gram flour.
- 2 Add the chopped onion, green chili, and coriander leaves to the mixture.
- 3 Season with red chili powder, cumin seeds, garam masala, and salt.
- 4 Mix everything thoroughly to form a thick batter. If the batter is too dry, add a little water.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Once the oil is hot, drop small portions of the batter into the oil using a spoon.
- 7 Fry the pakoras until they are golden brown and crispy on all sides.
- 8 Remove the pakoras from the oil and drain them on a paper towel to remove excess oil.
- 9 Serve hot with mint chutney or ketchup.
Tips
Ensure the oil is hot enough before frying to prevent the pakoras from absorbing too much oil.
