Ingredients

1 cup leftover khichdi
1 cup gram flour (besan)
1 small onion, finely chopped
1 small green chili, finely chopped
2 tablespoons fresh coriander leaves, chopped
0.5 teaspoon red chili powder
0.5 teaspoon cumin seeds
0.5 teaspoon garam masala
salt to taste
oil for deep frying

Instructions

  1. 1 In a mixing bowl, combine the leftover khichdi and gram flour.
  2. 2 Add the chopped onion, green chili, and coriander leaves to the mixture.
  3. 3 Season with red chili powder, cumin seeds, garam masala, and salt.
  4. 4 Mix everything thoroughly to form a thick batter. If the batter is too dry, add a little water.
  5. 5 Heat oil in a deep frying pan over medium heat.
  6. 6 Once the oil is hot, drop small portions of the batter into the oil using a spoon.
  7. 7 Fry the pakoras until they are golden brown and crispy on all sides.
  8. 8 Remove the pakoras from the oil and drain them on a paper towel to remove excess oil.
  9. 9 Serve hot with mint chutney or ketchup.

Tips

Ensure the oil is hot enough before frying to prevent the pakoras from absorbing too much oil.
