Ingredients

2 cups whole wheat flour
1 teaspoon salt
2 tablespoons ghee
as needed water

Instructions

  1. 1 In a large bowl, mix the whole wheat flour and salt.
  2. 2 Add 2 tablespoons of ghee to the flour and mix well until the mixture resembles breadcrumbs.
  3. 3 Gradually add water and knead into a firm dough. Cover and let it rest for 15 minutes.
  4. 4 Divide the dough into equal portions and shape into balls.
  5. 5 Roll out each ball into a thick disc of about 5-6 inches in diameter.
  6. 6 Using your fingers, pinch the surface of the disc to create a pattern of small ridges.
  7. 7 Heat a tawa or flat pan over medium heat and place the roti on it.
  8. 8 Cook on one side until light brown spots appear, then flip.
  9. 9 Apply ghee generously on the cooked side and cook the other side until golden brown.
  10. 10 Flip again and apply ghee on the other side as well.
  11. 11 Cook until both sides are evenly cooked and crispy.
  12. 12 Repeat the process with the remaining dough balls.

Tips

Serve hot with a side of dal or curry for an authentic Rajasthani meal.
