Ingredients
| 1 cup | khoi (popped rice) |
| 1 cup | water |
| 1 tablespoon | mustard oil |
| 1 teaspoon | salt |
| 1 teaspoon | turmeric powder |
| 1 small | onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, grated |
| 1 small | tomato, chopped |
| 1 handful | coriander leaves, chopped |
| — | green chili, chopped (optional) |
Instructions
- 1 Heat mustard oil in a pan over medium heat.
- 2 Add chopped onions and sauté until they turn translucent.
- 3 Add minced garlic and grated ginger, and sauté for another minute.
- 4 Stir in the chopped tomato and cook until it softens.
- 5 Add turmeric powder and salt, and mix well.
- 6 Pour in the water and bring it to a boil.
- 7 Add the khoi (popped rice) to the boiling water.
- 8 Reduce the heat to low and let it simmer until the khoi absorbs the water and becomes soft.
- 9 Stir in the chopped coriander leaves and green chili, if using.
- 10 Remove from heat and let it sit for a few minutes before serving.
Tips
For a richer flavor, you can add a pinch of roasted cumin powder before serving.
