Ingredients

Popped Rice 1 cup Popped Rice
water 1 cup Water
mustard oil 1 tablespoon Mustard oil
salt 1 teaspoon Salt
turmeric powder 1 teaspoon Turmeric powder
Onion 1 small Onion , finely chopped
Garlic 2 cloves Garlic , minced
Ginger 1 inch Ginger , grated
Tomato 1 small Tomato , chopped
Cilantro 1 handful Cilantro , chopped
Green Chili Green Chili , chopped, optional

Instructions

  1. 1 Heat mustard oil in a pan over medium heat.
  2. 2 Add chopped onions and sauté until they turn translucent.
  3. 3 Add minced garlic and grated ginger, and sauté for another minute.
  4. 4 Stir in the chopped tomato and cook until it softens.
  5. 5 Add turmeric powder and salt, and mix well.
  6. 6 Pour in the water and bring it to a boil.
  7. 7 Add the khoi (popped rice) to the boiling water.
  8. 8 Reduce the heat to low and let it simmer until the khoi absorbs the water and becomes soft.
  9. 9 Stir in the chopped coriander leaves and green chili, if using.
  10. 10 Remove from heat and let it sit for a few minutes before serving.

Tips

For a richer flavor, you can add a pinch of roasted cumin powder before serving.
