Ingredients

2 cups boiled and mashed potatoes
1 cup fresh grated coconut
2 tablespoons roasted peanuts, coarsely ground
1 tablespoon raisins
1 tablespoon sugar
1 teaspoon cumin seeds
1 teaspoon red chili powder
1 teaspoon garam masala
1 teaspoon amchur (dried mango powder)
1 teaspoon salt
2 tablespoons cornflour
oil for frying
2 tablespoons fresh coriander, finely chopped

Instructions

  1. 1 In a bowl, combine the grated coconut, roasted peanuts, raisins, sugar, cumin seeds, red chili powder, garam masala, amchur, and salt. Mix well to create the filling.
  2. 2 Divide the mashed potatoes into equal portions and flatten each portion into a small disc.
  3. 3 Place a small amount of the coconut filling in the center of each potato disc.
  4. 4 Gently fold the edges of the potato disc over the filling and shape it into a ball or patty.
  5. 5 Repeat the process with the remaining potato and filling.
  6. 6 In a separate bowl, mix cornflour with a little water to create a smooth batter.
  7. 7 Heat oil in a deep frying pan over medium heat.
  8. 8 Dip each patty into the cornflour batter, ensuring it is coated evenly.
  9. 9 Carefully place the patties into the hot oil and fry until golden brown and crispy on all sides.
  10. 10 Remove the patties from the oil and drain on paper towels to remove excess oil.
  11. 11 Garnish with fresh coriander and serve hot.

Tips

For a richer taste, add a pinch of saffron to the filling mixture.
