Ingredients
| 2 cups | boiled and mashed potatoes |
| 1 cup | fresh grated coconut |
| 2 tablespoons | roasted peanuts, coarsely ground |
| 1 tablespoon | raisins |
| 1 tablespoon | sugar |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | red chili powder |
| 1 teaspoon | garam masala |
| 1 teaspoon | amchur (dried mango powder) |
| 1 teaspoon | salt |
| 2 tablespoons | cornflour |
| — | oil for frying |
| 2 tablespoons | fresh coriander, finely chopped |
Instructions
- 1 In a bowl, combine the grated coconut, roasted peanuts, raisins, sugar, cumin seeds, red chili powder, garam masala, amchur, and salt. Mix well to create the filling.
- 2 Divide the mashed potatoes into equal portions and flatten each portion into a small disc.
- 3 Place a small amount of the coconut filling in the center of each potato disc.
- 4 Gently fold the edges of the potato disc over the filling and shape it into a ball or patty.
- 5 Repeat the process with the remaining potato and filling.
- 6 In a separate bowl, mix cornflour with a little water to create a smooth batter.
- 7 Heat oil in a deep frying pan over medium heat.
- 8 Dip each patty into the cornflour batter, ensuring it is coated evenly.
- 9 Carefully place the patties into the hot oil and fry until golden brown and crispy on all sides.
- 10 Remove the patties from the oil and drain on paper towels to remove excess oil.
- 11 Garnish with fresh coriander and serve hot.
Tips
For a richer taste, add a pinch of saffron to the filling mixture.
