Ingredients

Bamboo Shoot 1 cup Bamboo Shoot , fermented
Pork 200 grams Pork , cut into small pieces
Onion 1 medium Onion , finely chopped
Garlic 2 cloves Garlic , minced
Ginger 1 inch Ginger , minced
Green Chili 2 Green Chili , slit
mustard oil 1 tablespoon Mustard oil
turmeric powder 1 teaspoon Turmeric powder
salt Salt , to taste
water 1 cup Water

Instructions

  1. 1 Heat mustard oil in a pan over medium heat.
  2. 2 Add chopped onions and sauté until they turn translucent.
  3. 3 Add minced garlic and ginger, and sauté for another minute.
  4. 4 Add the pork pieces and cook until they start to brown.
  5. 5 Stir in the turmeric powder and salt.
  6. 6 Add the fermented bamboo shoot (khorisa) and mix well with the pork.
  7. 7 Pour in the water and bring to a boil.
  8. 8 Reduce the heat to low, cover, and let it simmer for 20-25 minutes or until the pork is tender.
  9. 9 Add the slit green chilies and cook for another 5 minutes.
  10. 10 Adjust seasoning if necessary and serve hot.

Tips

For a more intense flavor, allow the dish to sit for a few hours before serving.
