Ingredients
| 1 cup | fermented bamboo shoot (khorisa) |
| 200 grams | pork, cut into small pieces |
| 1 medium | onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 2 | green chilies, slit |
| 1 tablespoon | mustard oil |
| 1 teaspoon | turmeric powder |
| — | salt to taste |
| 1 cup | water |
Instructions
- 1 Heat mustard oil in a pan over medium heat.
- 2 Add chopped onions and sauté until they turn translucent.
- 3 Add minced garlic and ginger, and sauté for another minute.
- 4 Add the pork pieces and cook until they start to brown.
- 5 Stir in the turmeric powder and salt.
- 6 Add the fermented bamboo shoot (khorisa) and mix well with the pork.
- 7 Pour in the water and bring to a boil.
- 8 Reduce the heat to low, cover, and let it simmer for 20-25 minutes or until the pork is tender.
- 9 Add the slit green chilies and cook for another 5 minutes.
- 10 Adjust seasoning if necessary and serve hot.
Tips
For a more intense flavor, allow the dish to sit for a few hours before serving.
