Ingredients

1 cup raw rice
1 cup grated coconut
1/2 teaspoon salt
6 jackfruit leaves
1 banana leaf

Instructions

  1. 1 Wash and soak the raw rice for 2-3 hours.
  2. 2 Drain the water and grind the soaked rice with grated coconut and salt to a smooth batter, adding water as needed.
  3. 3 Clean the jackfruit leaves and make small baskets by weaving two leaves together using small sticks or toothpicks.
  4. 4 Cut the banana leaf into small squares to fit the bottom of each jackfruit leaf basket.
  5. 5 Place a banana leaf square at the bottom of each basket.
  6. 6 Fill each basket with the rice batter, leaving some space at the top for the batter to expand.
  7. 7 Steam the baskets in a steamer for about 30-40 minutes until the batter is cooked through.
  8. 8 Remove from steamer and allow to cool slightly before serving.

Tips

Ensure that the jackfruit leaves are fresh and not torn to prevent the batter from leaking.
