Ingredients
| 1 cup | raw rice |
| 1 cup | grated coconut |
| 1/2 teaspoon | salt |
| 6 | jackfruit leaves |
| 1 | banana leaf |
Instructions
- 1 Wash and soak the raw rice for 2-3 hours.
- 2 Drain the water and grind the soaked rice with grated coconut and salt to a smooth batter, adding water as needed.
- 3 Clean the jackfruit leaves and make small baskets by weaving two leaves together using small sticks or toothpicks.
- 4 Cut the banana leaf into small squares to fit the bottom of each jackfruit leaf basket.
- 5 Place a banana leaf square at the bottom of each basket.
- 6 Fill each basket with the rice batter, leaving some space at the top for the batter to expand.
- 7 Steam the baskets in a steamer for about 30-40 minutes until the batter is cooked through.
- 8 Remove from steamer and allow to cool slightly before serving.
Tips
Ensure that the jackfruit leaves are fresh and not torn to prevent the batter from leaking.
