Ingredients
| 1 cup | rice flour |
| 1 cup | all-purpose flour |
| 1/2 cup | jaggery |
| 1/4 cup | ghee |
| 1/4 teaspoon | cardamom powder |
| — | water as needed |
| — | oil for deep frying |
Instructions
- 1 Grate or finely chop the jaggery and dissolve it in a small amount of warm water to make a syrup.
- 2 In a mixing bowl, combine rice flour, all-purpose flour, cardamom powder, and melted ghee.
- 3 Gradually add the jaggery syrup to the flour mixture, kneading to form a smooth, firm dough. Add water if necessary.
- 4 Divide the dough into small portions and roll each portion into a ball.
- 5 Flatten each ball slightly to form discs.
- 6 Heat oil in a deep frying pan over medium heat.
- 7 Fry the discs in batches until they are golden brown and crispy on both sides.
- 8 Remove from oil and drain on paper towels to remove excess oil.
Tips
Ensure the oil is not too hot to prevent the khurmi from burning. Adjust the sweetness by varying the amount of jaggery.
