Ingredients
| 1/4 cup | khus khus (poppy seeds) |
| 1/4 cup | rice |
| 1/2 cup | sugar |
| 4 cups | milk |
| 1 tablespoon | ghee |
| 1/4 teaspoon | cardamom powder |
| 10-12 | almonds |
| 8-10 | cashews |
| 8-10 | raisins |
| — | saffron strands (optional) |
Instructions
- 1 Wash and soak the khus khus and rice separately in water for 2-3 hours.
- 2 Drain the water and grind the khus khus into a fine paste using a little water.
- 3 Grind the soaked rice into a coarse paste.
- 4 Heat ghee in a pan and fry the almonds, cashews, and raisins until golden. Set aside.
- 5 In the same pan, add the khus khus paste and sauté for 2-3 minutes on low heat.
- 6 Add the rice paste to the pan and sauté for another 2 minutes.
- 7 Gradually add milk to the pan, stirring continuously to avoid lumps.
- 8 Bring the mixture to a boil, then reduce the heat and let it simmer until the rice is cooked and the kheer thickens.
- 9 Add sugar and cardamom powder, stirring well to dissolve the sugar.
- 10 Garnish with fried nuts, raisins, and saffron strands before serving.
Tips
For a richer taste, use full-fat milk and add a pinch of salt to balance the sweetness.
