Ingredients

1/4 cup khus khus (poppy seeds)
1/4 cup rice
1/2 cup sugar
4 cups milk
1 tablespoon ghee
1/4 teaspoon cardamom powder
10-12 almonds
8-10 cashews
8-10 raisins
saffron strands (optional)

Instructions

  1. 1 Wash and soak the khus khus and rice separately in water for 2-3 hours.
  2. 2 Drain the water and grind the khus khus into a fine paste using a little water.
  3. 3 Grind the soaked rice into a coarse paste.
  4. 4 Heat ghee in a pan and fry the almonds, cashews, and raisins until golden. Set aside.
  5. 5 In the same pan, add the khus khus paste and sauté for 2-3 minutes on low heat.
  6. 6 Add the rice paste to the pan and sauté for another 2 minutes.
  7. 7 Gradually add milk to the pan, stirring continuously to avoid lumps.
  8. 8 Bring the mixture to a boil, then reduce the heat and let it simmer until the rice is cooked and the kheer thickens.
  9. 9 Add sugar and cardamom powder, stirring well to dissolve the sugar.
  10. 10 Garnish with fried nuts, raisins, and saffron strands before serving.

Tips

For a richer taste, use full-fat milk and add a pinch of salt to balance the sweetness.
