Ingredients
| 1 cup | glutinous rice flour |
| 1/4 teaspoon | salt |
| 3/4 cup | warm water |
| 1/2 cup | palm sugar |
| 1 cup | grated coconut |
| 1 drop | pandan essence |
Instructions
- 1 In a mixing bowl, combine the glutinous rice flour and salt.
- 2 Gradually add warm water and pandan essence (if using) to the flour mixture, kneading until it forms a smooth and pliable dough.
- 3 Divide the dough into small balls, about 1 inch in diameter.
- 4 Flatten each ball and place a small amount of chopped palm sugar in the center.
- 5 Carefully seal the dough around the sugar and roll it back into a smooth ball.
- 6 Bring a pot of water to a boil.
- 7 Gently drop the filled balls into the boiling water.
- 8 Cook until the balls float to the surface, which indicates they are done.
- 9 Remove the klepon from the pot using a slotted spoon and drain well.
- 10 Roll the cooked klepon in grated coconut until fully coated.
Tips
Ensure the palm sugar is finely chopped to facilitate easy filling and sealing of the klepon.
