Ingredients

Potato 1 large Potato , peeled and quartered
Onion 2 medium Onion , finely sliced
ginger-garlic paste 1 tablespoon Ginger-garlic paste
Tomato 2 medium Tomato , chopped
turmeric powder 1 teaspoon Turmeric powder
red chili powder 1 teaspoon Red chili powder
Cumin 1 teaspoon Cumin , powder
coriander powder 1 teaspoon Coriander powder
Bay Leaf 2 pieces Bay Leaf
cardamom 4 pieces Cardamom , green
Clove 4 pieces Clove
cinnamon stick 1 inch Cinnamon stick
water 2 cups Water
salt Salt , to taste
Cilantro Cilantro , fresh, for garnish

Instructions

  1. 1 Heat mustard oil in a heavy-bottomed pan until it smokes slightly.
  2. 2 Add bay leaves, green cardamom, cloves, and cinnamon stick. Sauté for a few seconds until aromatic.
  3. 3 Add sliced onions and fry until they turn golden brown.
  4. 4 Add ginger-garlic paste and sauté until the raw smell disappears.
  5. 5 Add chopped tomatoes and cook until they soften and the oil starts to separate.
  6. 6 Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.
  7. 7 Add the goat meat pieces and stir well to coat them with the spices.
  8. 8 Cover and cook on low heat for about 15 minutes, stirring occasionally.
  9. 9 Add the potato pieces and mix well.
  10. 10 Pour in water, cover, and let it simmer on low heat until the meat and potatoes are cooked through.
  11. 11 Check seasoning and adjust salt if necessary.
  12. 12 Garnish with fresh coriander leaves before serving.

For a richer flavor, marinate the goat meat with yogurt and spices for an hour before cooking.
