Ingredients

250 grams kochur loti (taro stolons)
2 tablespoons mustard oil
1 teaspoon panch phoron (Bengali five spice mix)
2 green chilies, slit
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin powder
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt or to taste
1 cup water
1 tablespoon fresh coriander leaves, chopped

Instructions

  1. 1 Clean the kochur loti thoroughly and cut them into 2-inch pieces.
  2. 2 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
  3. 3 Add panch phoron and let it splutter.
  4. 4 Add the chopped onions and sauté until they turn golden brown.
  5. 5 Add minced garlic and green chilies, and sauté for another minute.
  6. 6 Add turmeric powder, red chili powder, and cumin powder, and mix well.
  7. 7 Add the kochur loti pieces and stir to coat them with the spices.
  8. 8 Add salt and water, and bring it to a boil.
  9. 9 Reduce the heat, cover, and let it simmer until the kochur loti is tender and cooked through, about 20-25 minutes.
  10. 10 Uncover and cook until excess water evaporates and the oil separates from the spices.
  11. 11 Garnish with fresh coriander leaves before serving.
