Ingredients
| 250 grams | kochur loti (taro stolons) |
| 2 tablespoons | mustard oil |
| 1 teaspoon | panch phoron (Bengali five spice mix) |
| 2 | green chilies, slit |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | cumin powder |
| 1 | medium onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 teaspoon | salt or to taste |
| 1 cup | water |
| 1 tablespoon | fresh coriander leaves, chopped |
Instructions
- 1 Clean the kochur loti thoroughly and cut them into 2-inch pieces.
- 2 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
- 3 Add panch phoron and let it splutter.
- 4 Add the chopped onions and sauté until they turn golden brown.
- 5 Add minced garlic and green chilies, and sauté for another minute.
- 6 Add turmeric powder, red chili powder, and cumin powder, and mix well.
- 7 Add the kochur loti pieces and stir to coat them with the spices.
- 8 Add salt and water, and bring it to a boil.
- 9 Reduce the heat, cover, and let it simmer until the kochur loti is tender and cooked through, about 20-25 minutes.
- 10 Uncover and cook until excess water evaporates and the oil separates from the spices.
- 11 Garnish with fresh coriander leaves before serving.
