Ingredients
| 500 grams | chicken, cut into pieces |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 2 medium | onions, finely sliced |
| 1 tablespoon | ginger-garlic paste |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | garam masala |
| 1 teaspoon | black pepper powder |
| 2 tablespoons | lemon juice |
| Salt | to taste |
| 2 sprigs | curry leaves |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Heat oil in a pan over medium heat.
- 2 Add mustard seeds and cumin seeds, let them splutter.
- 3 Add sliced onions and sauté until they turn golden brown.
- 4 Add ginger-garlic paste and sauté until the raw smell disappears.
- 5 Add chicken pieces and cook until they are no longer pink.
- 6 Add red chili powder, turmeric powder, coriander powder, and salt. Mix well.
- 7 Cover and cook on low heat until the chicken is cooked through.
- 8 Remove the lid, add garam masala, black pepper powder, and curry leaves.
- 9 Increase the heat and sauté until the chicken is dry and roasted.
- 10 Add lemon juice and mix well.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For a richer taste, marinate the chicken with spices for at least 30 minutes before cooking.
