Ingredients

1 cup kodo millet
2 cups water
1 tbsp ghee
1 tsp cumin seeds
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 inch ginger, grated
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 cup mixed vegetables (peas, carrots, beans)
salt to taste
2 tbsp fresh coriander leaves, chopped

Instructions

  1. 1 Wash the kodo millet thoroughly and soak it in water for 15 minutes.
  2. 2 Heat ghee in a pan over medium heat.
  3. 3 Add cumin seeds and let them splutter.
  4. 4 Add the chopped onion and sauté until golden brown.
  5. 5 Stir in the grated ginger and chopped tomato, and cook until the tomato softens.
  6. 6 Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. 7 Add the mixed vegetables and sauté for a few minutes.
  8. 8 Drain the soaked kodo millet and add it to the pan.
  9. 9 Pour in 2 cups of water and bring it to a boil.
  10. 10 Lower the heat, cover, and let it simmer until the millet is cooked and water is absorbed, about 20-25 minutes.
  11. 11 Garnish with fresh coriander leaves before serving.

Tips

For a richer taste, you can add a handful of roasted peanuts or cashews.
