Ingredients
| 1 cup | kodo millet |
| 2 cups | water |
| 1 tbsp | ghee |
| 1 tsp | cumin seeds |
| 1 medium | onion, finely chopped |
| 1 medium | tomato, finely chopped |
| 1 inch | ginger, grated |
| 1 tsp | turmeric powder |
| 1 tsp | red chili powder |
| 1 tsp | coriander powder |
| 1 cup | mixed vegetables (peas, carrots, beans) |

| 2 tbsp | fresh coriander leaves, chopped |
Instructions
- 1 Wash the kodo millet thoroughly and soak it in water for 15 minutes.
- 2 Heat ghee in a pan over medium heat.
- 3 Add cumin seeds and let them splutter.
- 4 Add the chopped onion and sauté until golden brown.
- 5 Stir in the grated ginger and chopped tomato, and cook until the tomato softens.
- 6 Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- 7 Add the mixed vegetables and sauté for a few minutes.
- 8 Drain the soaked kodo millet and add it to the pan.
- 9 Pour in 2 cups of water and bring it to a boil.
- 10 Lower the heat, cover, and let it simmer until the millet is cooked and water is absorbed, about 20-25 minutes.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For a richer taste, you can add a handful of roasted peanuts or cashews.
