Ingredients
| 250 grams | ground beef or lamb |
| 1 small | onion, grated |
| 1 slice | stale bread, soaked in water and squeezed dry |
| 1 teaspoon | ground cumin |
| 1 teaspoon | ground paprika |
| 0.5 teaspoon | ground black pepper |
| — | salt to taste |
| 1 clove | garlic, minced |
| 2 tablespoons | chopped fresh parsley |
| 1 | egg |
| 2 tablespoons | olive oil for frying |
Instructions
- 1 In a large bowl, combine the ground meat, grated onion, soaked bread, cumin, paprika, black pepper, salt, garlic, parsley, and egg.
- 2 Mix the ingredients thoroughly until well combined.
- 3 Shape the mixture into small, oval patties, about the size of a walnut.
- 4 Heat olive oil in a frying pan over medium heat.
- 5 Fry the köfte in batches, turning occasionally, until they are browned on all sides and cooked through, about 8-10 minutes.
- 6 Remove the köfte from the pan and drain on paper towels.
- 7 Serve hot with rice, salad, or pita bread.

For a juicier texture, avoid over-mixing the meat mixture.
