Ingredients

10 pieces kokum
2 cups water
1 tablespoon ghee
0.5 teaspoon mustard seeds
0.5 teaspoon cumin seeds
1 pinch asafoetida
2 teaspoons jaggery
1 teaspoon red chili powder
0.5 teaspoon turmeric powder
1 teaspoon salt
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Soak the kokum in 2 cups of water for 15 minutes.
  2. 2 After soaking, squeeze the kokum to extract the juice and strain the liquid. Discard the kokum solids.
  3. 3 In a pan, heat ghee over medium heat.
  4. 4 Add mustard seeds and let them splutter.
  5. 5 Add cumin seeds and asafoetida, stirring briefly.
  6. 6 Pour in the kokum extract and bring it to a gentle boil.
  7. 7 Add jaggery, red chili powder, turmeric powder, and salt. Stir well.
  8. 8 Simmer the mixture for 5-7 minutes to allow the flavors to meld.
  9. 9 Garnish with fresh coriander leaves before serving.

Tips

Adjust the amount of jaggery and chili powder according to your taste preference for a sweeter or spicier saar.
