Ingredients
| 10 pieces | kokum |
| 2 cups | water |
| 1 tablespoon | ghee |
| 0.5 teaspoon | mustard seeds |
| 0.5 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 2 teaspoons | jaggery |
| 1 teaspoon | red chili powder |
| 0.5 teaspoon | turmeric powder |
| 1 teaspoon | salt |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Soak the kokum in 2 cups of water for 15 minutes.
- 2 After soaking, squeeze the kokum to extract the juice and strain the liquid. Discard the kokum solids.
- 3 In a pan, heat ghee over medium heat.
- 4 Add mustard seeds and let them splutter.
- 5 Add cumin seeds and asafoetida, stirring briefly.
- 6 Pour in the kokum extract and bring it to a gentle boil.
- 7 Add jaggery, red chili powder, turmeric powder, and salt. Stir well.
- 8 Simmer the mixture for 5-7 minutes to allow the flavors to meld.
- 9 Garnish with fresh coriander leaves before serving.
Tips
Adjust the amount of jaggery and chili powder according to your taste preference for a sweeter or spicier saar.
