Ingredients
| 2 | ripe bananas |
| 1 cup | all-purpose flour |
| 1/4 cup | rice flour |
| 1/2 cup | sugar |
| 1/2 teaspoon | baking powder |
| 1/4 teaspoon | cardamom powder |
| 1/4 teaspoon | salt |
| 1 tablespoon | grated coconut |
| 1 tablespoon | raisins |
| — | water as needed |
| — | oil for deep frying |
Instructions
- 1 Peel and mash the ripe bananas in a mixing bowl until smooth.
- 2 Add the all-purpose flour, rice flour, sugar, baking powder, cardamom powder, and salt to the mashed bananas.
- 3 Mix well to form a thick batter. If the batter is too thick, add a little water to adjust the consistency.
- 4 Stir in the grated coconut and raisins into the batter.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Once the oil is hot, drop spoonfuls of the batter into the oil, frying a few at a time.
- 7 Fry the fritters until they are golden brown and cooked through, about 3-4 minutes per side.
- 8 Remove the fritters from the oil and drain on paper towels to remove excess oil.
- 9 Serve warm as a snack or dessert.
Tips
Ensure the bananas are ripe for a sweeter and more flavorful fritter.
