Recipe

Prep: 10 min Cook: 20 min Total: 30 min 2-3 servings

Ingredients

2 ripe bananas
1 cup all-purpose flour
1/4 cup rice flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon cardamom powder
1/4 teaspoon salt
1 tablespoon grated coconut
1 tablespoon raisins
water as needed
oil for deep frying

Instructions

  1. 1 Peel and mash the ripe bananas in a mixing bowl until smooth.
  2. 2 Add the all-purpose flour, rice flour, sugar, baking powder, cardamom powder, and salt to the mashed bananas.
  3. 3 Mix well to form a thick batter. If the batter is too thick, add a little water to adjust the consistency.
  4. 4 Stir in the grated coconut and raisins into the batter.
  5. 5 Heat oil in a deep frying pan over medium heat.
  6. 6 Once the oil is hot, drop spoonfuls of the batter into the oil, frying a few at a time.
  7. 7 Fry the fritters until they are golden brown and cooked through, about 3-4 minutes per side.
  8. 8 Remove the fritters from the oil and drain on paper towels to remove excess oil.
  9. 9 Serve warm as a snack or dessert.

Tips

Ensure the bananas are ripe for a sweeter and more flavorful fritter.
