Ingredients
| 1/4 cup | basmati rice |
| 1 liter | full-fat milk |
| 1/4 cup | sugar |
| 1/4 teaspoon | cardamom powder |
| 1/4 cup | almonds, blanched and sliced |
| 1/4 cup | raisins |
| 1/4 teaspoon | saffron strands |
| 1 tablespoon | rose water |
Instructions
- 1 Wash the basmati rice thoroughly and soak it in water for 30 minutes.
- 2 Drain the rice and set aside.
- 3 In a heavy-bottomed pan, bring the milk to a boil.
- 4 Add the soaked and drained rice to the boiling milk.
- 5 Reduce the heat to low and cook, stirring frequently, until the rice is completely cooked and the mixture thickens, about 30 minutes.
- 6 Add sugar and cardamom powder, stirring well to combine.
- 7 Continue to cook on low heat for another 5 minutes, stirring occasionally.
- 8 Add the almonds, raisins, and saffron strands, mixing them into the phirin.
- 9 Cook for an additional 5 minutes, then remove from heat.
- 10 Stir in the rose water and let the phirin cool slightly before serving.
Tips
For a richer taste, use a mix of whole milk and cream. Garnish with additional nuts and saffron strands for a festive touch.
