Ingredients

1/4 cup basmati rice
1 liter full-fat milk
1/4 cup sugar
1/4 teaspoon cardamom powder
1/4 cup almonds, blanched and sliced
1/4 cup raisins
1/4 teaspoon saffron strands
1 tablespoon rose water

Instructions

  1. 1 Wash the basmati rice thoroughly and soak it in water for 30 minutes.
  2. 2 Drain the rice and set aside.
  3. 3 In a heavy-bottomed pan, bring the milk to a boil.
  4. 4 Add the soaked and drained rice to the boiling milk.
  5. 5 Reduce the heat to low and cook, stirring frequently, until the rice is completely cooked and the mixture thickens, about 30 minutes.
  6. 6 Add sugar and cardamom powder, stirring well to combine.
  7. 7 Continue to cook on low heat for another 5 minutes, stirring occasionally.
  8. 8 Add the almonds, raisins, and saffron strands, mixing them into the phirin.
  9. 9 Cook for an additional 5 minutes, then remove from heat.
  10. 10 Stir in the rose water and let the phirin cool slightly before serving.

Tips

For a richer taste, use a mix of whole milk and cream. Garnish with additional nuts and saffron strands for a festive touch.
