Ingredients

Cilantro 2 bunches Cilantro , chopped
sesame oil 2 tablespoons Sesame oil
Mustard Seed 1 teaspoon Mustard Seed
urad dal 1 teaspoon Urad dal
chana dal 1 teaspoon Chana dal
Tamarind 2 tablespoons Tamarind , pulp
jaggery 3 tablespoons Jaggery
Red Chili 3 to 4 Red Chili , dried
Chili 1 Chili , dried red
asafoetida 1 teaspoon Asafoetida
turmeric powder 1 teaspoon Turmeric powder
salt Salt , to taste

Instructions

  1. 1 Wash the coriander leaves thoroughly and roughly chop them.
  2. 2 Heat sesame oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add urad dal and chana dal, and sauté until golden brown.
  5. 5 Add dried red chilies and green chili, and sauté for a minute.
  6. 6 Add the chopped coriander leaves and sauté until they wilt.
  7. 7 Add tamarind pulp, jaggery, asafoetida, turmeric powder, and salt.
  8. 8 Cook the mixture until it thickens and the oil separates.
  9. 9 Allow the mixture to cool, then blend it into a coarse paste.

Store in an airtight container in the refrigerator for up to a week.
