Ingredients
| 2 bunches | fresh coriander leaves |
| 2 tablespoons | sesame oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | urad dal |
| 1 teaspoon | chana dal |
| 2 tablespoons | tamarind pulp |
| 3 tablespoons | jaggery |
| 3 to 4 | dried red chilies |
| 1 | green chili |
| 1 teaspoon | asafoetida |
| 1 teaspoon | turmeric powder |
| — | salt to taste |
Instructions
- 1 Wash the coriander leaves thoroughly and roughly chop them.
- 2 Heat sesame oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add urad dal and chana dal, and sauté until golden brown.
- 5 Add dried red chilies and green chili, and sauté for a minute.
- 6 Add the chopped coriander leaves and sauté until they wilt.
- 7 Add tamarind pulp, jaggery, asafoetida, turmeric powder, and salt.
- 8 Cook the mixture until it thickens and the oil separates.
- 9 Allow the mixture to cool, then blend it into a coarse paste.

Store in an airtight container in the refrigerator for up to a week.
