Ingredients

500 grams chicken, cut into pieces
2 tablespoons oil
1 teaspoon fennel seeds
2 onions, finely sliced
2 tablespoons ginger-garlic paste
2 green chilies, slit
1 teaspoon turmeric powder
2 tablespoons red chili powder
1 tablespoon coriander powder
1 teaspoon garam masala
2 tablespoons lemon juice
1 curry leaves sprig
salt to taste

Instructions

  1. 1 Heat oil in a pan and add fennel seeds.
  2. 2 Once the seeds splutter, add sliced onions and sauté until golden brown.
  3. 3 Add ginger-garlic paste and sauté until the raw smell disappears.
  4. 4 Add the chicken pieces and cook until they turn white.
  5. 5 Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. 6 Cover and cook the chicken on medium heat for 15-20 minutes, stirring occasionally.
  7. 7 Once the chicken is cooked, add garam masala, lemon juice, and curry leaves.
  8. 8 Increase the heat and sauté until the chicken is dry and roasted.
  9. 9 Serve hot with rice or roti.

Tips

For extra flavor, marinate the chicken with spices for 30 minutes before cooking.
