Ingredients

1 cup rice flour
1 cup sugar
1/4 cup ghee
2 cups water
1/2 teaspoon cardamom powder
1/4 cup cashew nuts
1/4 cup raisins
1 pinch salt
1 teaspoon vanilla essence
1 tablespoon coconut oil

Instructions

  1. 1 In a bowl, mix rice flour with water to form a smooth batter without lumps.
  2. 2 In a heavy-bottomed pan, heat the ghee and coconut oil together.
  3. 3 Add cashew nuts and raisins to the pan, fry until golden, and set aside.
  4. 4 To the same pan, add the rice flour batter and stir continuously on low heat.
  5. 5 Gradually add sugar while stirring to ensure it dissolves completely.
  6. 6 Continue stirring until the mixture thickens and starts leaving the sides of the pan.
  7. 7 Add cardamom powder, vanilla essence, and a pinch of salt, mixing well.
  8. 8 Stir in the fried cashew nuts and raisins.
  9. 9 Cook until the halwa reaches a glossy consistency and starts to leave the pan.
  10. 10 Transfer the halwa into a greased plate or tray, flatten it with a spatula, and let it cool.
  11. 11 Once set, cut into pieces and serve.

Tips

For a richer flavor, you can add a few drops of rose water or saffron strands soaked in warm milk.
