Ingredients

1 cup toor dal (pigeon peas)
1 small onion, finely chopped
1 small tomato, chopped
2 cloves garlic, crushed
1 inch ginger, grated
2 tablespoons tamarind pulp
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon jaggery
salt to taste
2 tablespoons oil
1 handful curry leaves
2 tablespoons fresh coriander leaves, chopped
4 cups water

Instructions

  1. 1 Wash the toor dal thoroughly and pressure cook it with 2 cups of water until soft and mushy.
  2. 2 In a pan, heat oil over medium heat and add mustard seeds and cumin seeds.
  3. 3 Once they splutter, add curry leaves, garlic, and ginger. Sauté for a minute.
  4. 4 Add the chopped onions and fry until they turn golden brown.
  5. 5 Stir in the chopped tomatoes and cook until they become soft.
  6. 6 Add turmeric powder, red chili powder, and salt. Mix well.
  7. 7 Add the cooked dal to the pan along with 2 more cups of water and bring to a boil.
  8. 8 Mix in the tamarind pulp and jaggery, and let it simmer for 10-15 minutes.
  9. 9 Garnish with fresh coriander leaves before serving.

Tips

Adjust the consistency of the saaru by adding more or less water as per your preference.
