Ingredients
| 1 cup | toor dal (pigeon peas) |
| 1 small | onion, finely chopped |
| 1 small | tomato, chopped |
| 2 cloves | garlic, crushed |
| 1 inch | ginger, grated |
| 2 tablespoons | tamarind pulp |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | jaggery |
| — | salt to taste |
| 2 tablespoons | oil |
| 1 handful | curry leaves |
| 2 tablespoons | fresh coriander leaves, chopped |
| 4 cups | water |
Instructions
- 1 Wash the toor dal thoroughly and pressure cook it with 2 cups of water until soft and mushy.
- 2 In a pan, heat oil over medium heat and add mustard seeds and cumin seeds.
- 3 Once they splutter, add curry leaves, garlic, and ginger. Sauté for a minute.
- 4 Add the chopped onions and fry until they turn golden brown.
- 5 Stir in the chopped tomatoes and cook until they become soft.
- 6 Add turmeric powder, red chili powder, and salt. Mix well.
- 7 Add the cooked dal to the pan along with 2 more cups of water and bring to a boil.
- 8 Mix in the tamarind pulp and jaggery, and let it simmer for 10-15 minutes.
- 9 Garnish with fresh coriander leaves before serving.
Tips
Adjust the consistency of the saaru by adding more or less water as per your preference.
