Ingredients

1/2 cup moong dal
2 cups water
2 tablespoons coconut oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
1 medium onion, finely chopped
2 medium potatoes, peeled and cubed
1 teaspoon ginger-garlic paste
2 green chilies, slit
1/4 teaspoon turmeric powder
1/2 cup coconut milk
1 tablespoon lemon juice
1 tablespoon coriander leaves, chopped
salt to taste

Instructions

  1. 1 Wash the moong dal thoroughly and pressure cook it with 2 cups of water until soft.
  2. 2 Heat coconut oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and asafoetida.
  3. 3 Add the chopped onion and sauté until translucent.
  4. 4 Add the cubed potatoes, ginger-garlic paste, and green chilies. Sauté for a few minutes.
  5. 5 Add turmeric powder and cooked moong dal to the pan. Mix well.
  6. 6 Pour in the coconut milk and let the mixture simmer until the potatoes are cooked through.
  7. 7 Add salt to taste and stir in the lemon juice.
  8. 8 Garnish with chopped coriander leaves before serving.

Tips

For a richer flavor, you can add a few curry leaves while tempering the spices.
