Ingredients
| 1/2 cup | moong dal |
| 2 cups | water |
| 2 tablespoons | coconut oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 medium | onion, finely chopped |
| 2 medium | potatoes, peeled and cubed |
| 1 teaspoon | ginger-garlic paste |
| 2 | green chilies, slit |
| 1/4 teaspoon | turmeric powder |
| 1/2 cup | coconut milk |
| 1 tablespoon | lemon juice |
| 1 tablespoon | coriander leaves, chopped |
| — | salt to taste |
Instructions
- 1 Wash the moong dal thoroughly and pressure cook it with 2 cups of water until soft.
- 2 Heat coconut oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and asafoetida.
- 3 Add the chopped onion and sauté until translucent.
- 4 Add the cubed potatoes, ginger-garlic paste, and green chilies. Sauté for a few minutes.
- 5 Add turmeric powder and cooked moong dal to the pan. Mix well.
- 6 Pour in the coconut milk and let the mixture simmer until the potatoes are cooked through.
- 7 Add salt to taste and stir in the lemon juice.
- 8 Garnish with chopped coriander leaves before serving.
Tips
For a richer flavor, you can add a few curry leaves while tempering the spices.
