Ingredients
| 1 cup | ripe jackfruit bulbs |
| 1 cup | rice flour |
| 1/2 cup | grated coconut |
| 1/2 cup | jaggery |
| 1/4 teaspoon | cardamom powder |
| — | banana leaves |
| — | water as needed |
| 1 pinch | salt |
Instructions
- 1 Deseed the jackfruit bulbs and chop them into small pieces.
- 2 In a blender, grind the jackfruit pieces into a smooth paste.
- 3 Melt the jaggery in a small amount of water over low heat to make a syrup, then strain to remove impurities.
- 4 In a mixing bowl, combine the jackfruit paste, rice flour, grated coconut, jaggery syrup, cardamom powder, and a pinch of salt.
- 5 Mix well to form a thick batter. Add water if necessary to achieve the right consistency.
- 6 Cut the banana leaves into squares of about 8x8 inches and wilt them over a flame to make them pliable.
- 7 Place a spoonful of the batter onto each banana leaf square.
- 8 Fold the leaf around the batter to form a cone or cylindrical shape, securing it with a toothpick if needed.
- 9 Place the wrapped cones in a steamer and steam them for about 20-25 minutes until cooked through.
- 10 Remove from the steamer and let them cool slightly before serving.
Tips
Ensure the banana leaves are soft and pliable to prevent tearing while wrapping.
