Ingredients

250 grams pumpkin, peeled and sliced into thin wedges
2 tablespoons mustard oil
1/2 teaspoon turmeric powder
salt to taste
2 pieces green chilies, slit
1/2 teaspoon nigella seeds (kalonji)

Instructions

  1. 1 In a bowl, mix the pumpkin slices with turmeric powder and salt.
  2. 2 Heat mustard oil in a pan until it begins to smoke slightly, then reduce the heat to medium.
  3. 3 Add the nigella seeds to the hot oil and let them sizzle for a few seconds.
  4. 4 Add the slit green chilies to the pan and sauté for a few seconds.
  5. 5 Add the spiced pumpkin slices to the pan, spreading them out evenly.
  6. 6 Cook on medium heat for about 10 minutes, stirring occasionally, until the pumpkin is tender and slightly crispy on the edges.
  7. 7 Remove from heat and serve hot as a side dish.

Tips

Ensure the mustard oil is properly heated to reduce its pungency and enhance the flavor.
