Ingredients
| 250 grams | pumpkin, peeled and sliced into thin wedges |
| 2 tablespoons | mustard oil |
| 1/2 teaspoon | turmeric powder |
| — | salt to taste |
| 2 pieces | green chilies, slit |
| 1/2 teaspoon | nigella seeds (kalonji) |
Instructions
- 1 In a bowl, mix the pumpkin slices with turmeric powder and salt.
- 2 Heat mustard oil in a pan until it begins to smoke slightly, then reduce the heat to medium.
- 3 Add the nigella seeds to the hot oil and let them sizzle for a few seconds.
- 4 Add the slit green chilies to the pan and sauté for a few seconds.
- 5 Add the spiced pumpkin slices to the pan, spreading them out evenly.
- 6 Cook on medium heat for about 10 minutes, stirring occasionally, until the pumpkin is tender and slightly crispy on the edges.
- 7 Remove from heat and serve hot as a side dish.
Tips
Ensure the mustard oil is properly heated to reduce its pungency and enhance the flavor.
