Fried sweet wheat pastry — maida or wheat flour dough sweetened with sugar and flavoured with cardamom, rolled thin, folded into triangles or half-moons, and deep-fried until crisp and pale golden. A popular festival sweet made for Diwali, Teej, and weddings across Chhattisgarh, also sold at market stalls. Light and flaky with a dry sweetness.

Ingredients

1 cup rice flour
1/2 cup jaggery
1/4 cup grated coconut
1 tablespoon ghee
1/2 teaspoon cardamom powder
1 pinch salt
water as needed

Instructions

  1. 1 In a pan, melt the jaggery with a little water to make a syrup. Strain to remove impurities and set aside.
  2. 2 In a mixing bowl, combine rice flour, grated coconut, cardamom powder, and a pinch of salt.
  3. 3 Add the jaggery syrup to the rice flour mixture and mix well to form a smooth dough. Add water if necessary.
  4. 4 Divide the dough into small portions and shape them into small, flat discs.
  5. 5 Heat ghee in a pan over medium heat.
  6. 6 Fry the discs in the ghee until they are golden brown and cooked through.
  7. 7 Remove from the pan and drain excess ghee on paper towels.

Tips

Ensure the jaggery syrup is not too watery to prevent the dough from becoming too sticky.
