Churned yogurt drink — thick full-fat yogurt blended with water and either sugar (sweet lassi) or salt and roasted cumin (salted lassi), churned until frothy and served in a tall clay kulhad or steel glass. Sweet lassi is the cooling summer drink of North India, while salted lassi aids digestion after a heavy meal. The Delhi version is thicker and richer than Punjabi roadside lassi and is often topped with a layer of malai (cream). Pairs with any oily, heavy North Indian meal.

Ingredients
| 2 cups | plain yogurt |
| 1 cup | cold water |
| 2 tablespoons | sugar |
| 1 teaspoon | rose water |
| 1 pinch | salt |
| 1 teaspoon | cardamom powder |
| 1 tablespoon | chopped pistachios |
| 1 tablespoon | chopped almonds |
Instructions
- 1 In a large mixing bowl, combine the plain yogurt, cold water, and sugar.
- 2 Whisk the mixture vigorously until the sugar is completely dissolved and the lassi is frothy.
- 3 Add the rose water, a pinch of salt, and cardamom powder. Mix well.
- 4 Pour the lassi into serving glasses.
- 5 Garnish each glass with chopped pistachios and almonds.
- 6 Serve immediately, chilled.
Tips
For a thicker consistency, reduce the amount of water or use Greek yogurt.
