Churned yogurt drink — thick full-fat yogurt blended with water and either sugar (sweet lassi) or salt and roasted cumin (salted lassi), churned until frothy and served in a tall clay kulhad or steel glass. Sweet lassi is the cooling summer drink of North India, while salted lassi aids digestion after a heavy meal. The Delhi version is thicker and richer than Punjabi roadside lassi and is often topped with a layer of malai (cream). Pairs with any oily, heavy North Indian meal.

Ingredients

2 cups plain yogurt
1 cup cold water
2 tablespoons sugar
1 teaspoon rose water
1 pinch salt
1 teaspoon cardamom powder
1 tablespoon chopped pistachios
1 tablespoon chopped almonds

Instructions

  1. 1 In a large mixing bowl, combine the plain yogurt, cold water, and sugar.
  2. 2 Whisk the mixture vigorously until the sugar is completely dissolved and the lassi is frothy.
  3. 3 Add the rose water, a pinch of salt, and cardamom powder. Mix well.
  4. 4 Pour the lassi into serving glasses.
  5. 5 Garnish each glass with chopped pistachios and almonds.
  6. 6 Serve immediately, chilled.

Tips

For a thicker consistency, reduce the amount of water or use Greek yogurt.
