Ingredients
| 1 cup | garlic cloves |
| 1/2 cup | dry coconut, grated |
| 2 tablespoons | red chili powder |
| 1 tablespoon | coriander seeds |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | tamarind pulp |
| — | salt to taste |
| 1 tablespoon | oil |
Instructions
- 1 Peel the garlic cloves and set aside.
- 2 In a pan, dry roast the grated dry coconut until it turns golden brown. Remove and set aside.
- 3 In the same pan, dry roast the coriander seeds and cumin seeds until aromatic. Remove and set aside.
- 4 Heat oil in the pan and sauté the garlic cloves until they are golden and soft. Allow to cool.
- 5 In a grinder, add the roasted coconut, coriander seeds, cumin seeds, sautéed garlic, red chili powder, tamarind pulp, and salt.
- 6 Grind everything to a coarse paste. Add a little water if necessary to achieve the desired consistency.
- 7 Taste and adjust the salt or chili powder as needed.
Tips
For a smokier flavor, roast the garlic on an open flame before grinding.
