Ingredients

1 cup garlic cloves
1/2 cup dry coconut, grated
2 tablespoons red chili powder
1 tablespoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon tamarind pulp
salt to taste
1 tablespoon oil

Instructions

  1. 1 Peel the garlic cloves and set aside.
  2. 2 In a pan, dry roast the grated dry coconut until it turns golden brown. Remove and set aside.
  3. 3 In the same pan, dry roast the coriander seeds and cumin seeds until aromatic. Remove and set aside.
  4. 4 Heat oil in the pan and sauté the garlic cloves until they are golden and soft. Allow to cool.
  5. 5 In a grinder, add the roasted coconut, coriander seeds, cumin seeds, sautéed garlic, red chili powder, tamarind pulp, and salt.
  6. 6 Grind everything to a coarse paste. Add a little water if necessary to achieve the desired consistency.
  7. 7 Taste and adjust the salt or chili powder as needed.

Tips

For a smokier flavor, roast the garlic on an open flame before grinding.
