Ingredients

1 cup lauki (bottle gourd), grated
1 cup yogurt, whisked
1 teaspoon cumin seeds
1 green chili, finely chopped
1 teaspoon oil
1 tablespoon fresh coriander leaves, chopped
1/2 teaspoon black salt
1/4 teaspoon red chili powder
salt to taste

Instructions

  1. 1 Peel and grate the lauki (bottle gourd).
  2. 2 In a pan, heat oil and add cumin seeds. Allow them to splutter.
  3. 3 Add the grated lauki and sauté for 5-7 minutes until it softens.
  4. 4 Let the cooked lauki cool to room temperature.
  5. 5 In a bowl, whisk the yogurt until smooth.
  6. 6 Add the cooled lauki, green chili, black salt, red chili powder, and salt to the yogurt.
  7. 7 Mix well until all ingredients are combined.
  8. 8 Garnish with chopped coriander leaves.
  9. 9 Chill in the refrigerator for 15-20 minutes before serving.

Tips

For a richer taste, use full-fat yogurt and add a pinch of roasted cumin powder.
