Bihar's defining dish — dense wheat dough balls packed with a filling of roasted sattu (gram flour), raw mango, garlic, carom seeds, and mustard oil, baked in wood-coal embers until charred and smoky, then broken open and dunked in ghee. Served alongside chokha — a smoky mash of roasted brinjal, tomato, and potato mixed with raw onion, garlic, green chilli, and mustard oil. A complete, self-contained meal.

Ingredients
| 2 cups | whole wheat flour |
| 1 cup | sattu (roasted gram flour) |
| 1 tsp | carom seeds |
| 1 tsp | nigella seeds |
| 2 tbsp | mustard oil |
| 1 tbsp | pickle masala |
| 1 tsp | salt |
| 1 tsp | red chili powder |
| 1 tbsp | lemon juice |
| 2 tbsp | fresh coriander leaves, chopped |
| 3 medium | potatoes |
| 2 medium | eggplants |
| 3 | tomatoes |
| 1 | onion, finely chopped |
| 2 tbsp | ginger, finely chopped |
| 2 tbsp | green chilies, finely chopped |
| 2 tbsp | garlic, finely chopped |
| — | salt to taste |
| — | ghee for serving |
Instructions
- 1 In a bowl, mix whole wheat flour with carom seeds, nigella seeds, and a pinch of salt. Add water gradually and knead into a firm dough. Set aside.
- 2 For the stuffing, mix sattu with mustard oil, pickle masala, salt, red chili powder, lemon juice, and chopped coriander leaves. Add a little water to make a crumbly mixture.
- 3 Divide the dough into equal portions and flatten each into a small disc. Place a spoonful of sattu mixture in the center and fold the edges to seal. Shape into a ball.
- 4 Preheat an oven to 200°C (392°F). Place the littis on a baking tray and bake for 25-30 minutes, turning occasionally, until golden brown.
- 5 For the chokha, roast potatoes, eggplants, and tomatoes directly over a flame or in an oven until charred and cooked through.
- 6 Peel the roasted vegetables and mash them together in a bowl.
- 7 Add finely chopped onion, ginger, green chilies, garlic, and salt to the mashed vegetables. Mix well.
- 8 Serve the littis hot with chokha and a generous drizzle of ghee.
Tips
For an authentic taste, cook littis over a charcoal grill instead of baking.
