Ingredients
| 250 grams | small fish (like Indian anchovy or any small freshwater fish) |
| 1 medium | onion, finely sliced |
| 2 cloves | garlic, finely chopped |
| 1 inch | ginger, finely chopped |
| 2 tablespoons | mustard oil |
| 1 teaspoon | turmeric powder |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
| 1 teaspoon | green chili, chopped (optional) |
Instructions
- 1 Clean the fish thoroughly and pat them dry with a kitchen towel.
- 2 In a bowl, marinate the fish with turmeric powder and salt. Let it sit for 10 minutes.
- 3 Heat mustard oil in a frying pan over medium heat.
- 4 Add the sliced onions and sauté until they turn golden brown.
- 5 Add the chopped garlic and ginger, and sauté for another 2 minutes.
- 6 Add the marinated fish to the pan and spread them out evenly.
- 7 Fry the fish on medium heat until they are crispy and golden brown on both sides, turning occasionally.
- 8 Add chopped green chili if using, and sauté for another minute.
- 9 Garnish with fresh coriander leaves before serving.

Ensure the fish are dry before marinating to achieve a crispy texture when fried.
