Ingredients

1 cup semolina (rava)
1 cup rice flour
1/2 cup all-purpose flour (maida)
1 tablespoon ghee
1 teaspoon cumin seeds
1 teaspoon crushed black pepper
1 tablespoon finely chopped green chilies
1 tablespoon finely chopped curry leaves
1 tablespoon finely chopped coriander leaves
1/4 cup finely chopped onions
1 tablespoon grated coconut
to taste salt
as needed water
for deep frying oil

Instructions

  1. 1 In a large mixing bowl, combine semolina, rice flour, and all-purpose flour.
  2. 2 Add ghee, cumin seeds, crushed black pepper, green chilies, curry leaves, coriander leaves, onions, grated coconut, and salt.
  3. 3 Mix all the ingredients well.
  4. 4 Gradually add water to form a firm dough. The dough should be stiff but pliable.
  5. 5 Divide the dough into small lemon-sized balls.
  6. 6 Flatten each ball into a disc, about 1/4 inch thick, using your palms.
  7. 7 Heat oil in a deep frying pan over medium heat.
  8. 8 Once the oil is hot, gently slide the flattened discs into the oil.
  9. 9 Fry the vadas on medium heat until they turn golden brown and crispy on both sides.
  10. 10 Remove the vadas from the oil and drain them on paper towels to remove excess oil.
  11. 11 Serve the Maddur Vadas hot with coconut chutney or as a snack.

Tips

Ensure the oil is not too hot to prevent the vadas from browning too quickly on the outside while remaining uncooked inside.
