Ingredients
| 1 cup | semolina (rava) |
| 1 cup | rice flour |
| 1/2 cup | all-purpose flour (maida) |
| 1 tablespoon | ghee |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | crushed black pepper |
| 1 tablespoon | finely chopped green chilies |
| 1 tablespoon | finely chopped curry leaves |
| 1 tablespoon | finely chopped coriander leaves |
| 1/4 cup | finely chopped onions |
| 1 tablespoon | grated coconut |
| to taste | salt |
| as needed | water |
| for deep frying | oil |
Instructions
- 1 In a large mixing bowl, combine semolina, rice flour, and all-purpose flour.
- 2 Add ghee, cumin seeds, crushed black pepper, green chilies, curry leaves, coriander leaves, onions, grated coconut, and salt.
- 3 Mix all the ingredients well.
- 4 Gradually add water to form a firm dough. The dough should be stiff but pliable.
- 5 Divide the dough into small lemon-sized balls.
- 6 Flatten each ball into a disc, about 1/4 inch thick, using your palms.
- 7 Heat oil in a deep frying pan over medium heat.
- 8 Once the oil is hot, gently slide the flattened discs into the oil.
- 9 Fry the vadas on medium heat until they turn golden brown and crispy on both sides.
- 10 Remove the vadas from the oil and drain them on paper towels to remove excess oil.
- 11 Serve the Maddur Vadas hot with coconut chutney or as a snack.
Tips
Ensure the oil is not too hot to prevent the vadas from browning too quickly on the outside while remaining uncooked inside.
