Ingredients

2 cups madua (finger millet) flour
1 cup whole wheat flour
1 cup water
salt to taste
ghee or oil for cooking

Instructions

  1. 1 In a large mixing bowl, combine madua flour, whole wheat flour, and salt.
  2. 2 Gradually add water to the flour mixture, kneading it into a soft and pliable dough.
  3. 3 Divide the dough into small, equal-sized balls.
  4. 4 Flatten each ball with your palms and roll it out into a round roti using a rolling pin.
  5. 5 Heat a tawa or flat skillet over medium heat.
  6. 6 Place a rolled-out roti on the hot tawa and cook until small bubbles appear on the surface.
  7. 7 Flip the roti and cook the other side, applying a little ghee or oil.
  8. 8 Press gently with a spatula to ensure even cooking and puffing.
  9. 9 Repeat the process with the remaining dough balls.
  10. 10 Serve hot with a side of curry or chutney.

Tips

For softer rotis, let the dough rest for 10-15 minutes before rolling.
