Ingredients

2 cups corn kernels (fresh or frozen)
1 tablespoon oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 cup onion, finely chopped
1 cup tomato, finely chopped
1 teaspoon ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Heat oil in a pan over medium heat.
  2. 2 Add cumin seeds and mustard seeds. Let them splutter.
  3. 3 Add the chopped onions and sauté until they turn golden brown.
  4. 4 Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  5. 5 Add chopped tomatoes and cook until they become soft and mushy.
  6. 6 Mix in the red chili powder, turmeric powder, coriander powder, and salt.
  7. 7 Add the corn kernels and mix well, ensuring they are coated with the spices.
  8. 8 Cover and cook for about 10-15 minutes on low heat, stirring occasionally.
  9. 9 Once the corn is cooked, add garam masala and mix well.
  10. 10 Garnish with fresh coriander leaves before serving.

Tips

For a smoky flavor, roast the corn on an open flame before adding it to the dish.
