Ingredients
| 2 | ripe bananas (Nendran variety) |
| 3 | eggs |
| 1/4 cup | sugar |
| 1/4 cup | all-purpose flour |
| 1/4 cup | ghee |
| 1/4 cup | cashew nuts |
| 1/4 cup | raisins |
| 1/2 teaspoon | cardamom powder |
| 1/4 teaspoon | baking soda |
| — | salt to taste |
Instructions
- 1 Peel and slice the bananas into thin rounds.
- 2 Heat ghee in a pan and fry the cashew nuts and raisins until golden brown. Remove and set aside.
- 3 In the same pan, add the sliced bananas and sauté until they turn soft. Remove from heat and let them cool.
- 4 In a bowl, beat the eggs with sugar until the sugar dissolves.
- 5 Add the all-purpose flour, cardamom powder, baking soda, and a pinch of salt to the egg mixture. Mix well to form a smooth batter.
- 6 Gently fold the sautéed bananas, fried cashew nuts, and raisins into the batter.
- 7 Grease a heavy-bottomed pan with ghee and pour the batter into it.
- 8 Cover the pan with a lid and cook on low heat for about 20-25 minutes until the Kaipola is set and cooked through.
- 9 Once done, let it cool slightly before flipping it onto a plate.
- 10 Cut into wedges and serve warm.
Tips
Use ripe bananas for the best flavor and texture.
