| 4 | eggs |
| 1 cup | sugar |
| 1 cup | water |
| 1 tablespoon | ghee |
| 1 teaspoon | cardamom powder |
| — | pinch of salt |
Instructions
- 1 Separate the egg yolks from the whites and keep the yolks aside.
- 2 In a saucepan, combine sugar and water. Heat until the sugar dissolves completely to form a syrup.
- 3 Add cardamom powder and a pinch of salt to the syrup, then remove from heat.
- 4 In a bowl, beat the egg yolks until smooth.
- 5 Heat ghee in a pan over low heat.
- 6 Using a piping bag or a spoon, drizzle the egg yolk in circular patterns into the hot ghee to form lace-like strands.
- 7 Cook the strands until they are set but not browned, then remove and drain on paper towels.
- 8 Dip the cooked egg strands into the prepared sugar syrup for a few seconds, then remove and let them cool.
Tips
Ensure the ghee is not too hot to avoid browning the egg strands.
