Ingredients

4 eggs
1 cup sugar
1 cup water
1 tablespoon ghee
1 teaspoon cardamom powder
pinch of salt

Instructions

  1. 1 Separate the egg yolks from the whites and keep the yolks aside.
  2. 2 In a saucepan, combine sugar and water. Heat until the sugar dissolves completely to form a syrup.
  3. 3 Add cardamom powder and a pinch of salt to the syrup, then remove from heat.
  4. 4 In a bowl, beat the egg yolks until smooth.
  5. 5 Heat ghee in a pan over low heat.
  6. 6 Using a piping bag or a spoon, drizzle the egg yolk in circular patterns into the hot ghee to form lace-like strands.
  7. 7 Cook the strands until they are set but not browned, then remove and drain on paper towels.
  8. 8 Dip the cooked egg strands into the prepared sugar syrup for a few seconds, then remove and let them cool.

Tips

Ensure the ghee is not too hot to avoid browning the egg strands.
