Ingredients
| 1 cup | raw rice |
| 1 cup | grated coconut |
| 1 teaspoon | fennel seeds |
| 2 tablespoons | sugar |
| 1 pinch | salt |
| 1 teaspoon | baking soda |
| 2 | eggs |
| as needed | oil for frying |
Instructions
- 1 Wash and soak the rice for 4-5 hours or overnight.
- 2 Drain the soaked rice and grind it along with grated coconut and fennel seeds to a smooth batter using minimal water.
- 3 Transfer the batter to a bowl and add sugar, salt, and baking soda. Mix well.
- 4 Beat the eggs lightly and add them to the batter. Mix until well combined.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Pour a ladleful of batter into the hot oil and fry until golden brown and puffed up.
- 7 Flip and cook the other side as well.
- 8 Remove from oil and drain on paper towels.
- 9 Serve hot with tea or as a snack.
Tips
Ensure the oil is hot enough before frying to get a perfect puffed surka.
