Ingredients
| 500 grams | mutton, cut into pieces |
| 2 tablespoons | coconut oil |
| 1 | large onion, thinly sliced |
| 2 | green chilies, slit |
| 1 tablespoon | ginger-garlic paste |
| 1 teaspoon | turmeric powder |
| 2 teaspoons | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | garam masala |
| 1 teaspoon | fennel seeds |
| 1 cup | coconut milk |
| 1 sprig | curry leaves |
| 1 tablespoon | lemon juice |
| 1 tablespoon | coriander leaves, chopped |
Instructions
- 1 Heat coconut oil in a heavy-bottomed pan over medium heat.
- 2 Add fennel seeds and let them splutter.
- 3 Add sliced onions and sauté until they turn golden brown.
- 4 Add ginger-garlic paste and sauté until the raw smell disappears.
- 5 Add green chilies, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- 6 Add mutton pieces and stir to coat them with the spices.
- 7 Pour in the coconut milk and add curry leaves. Mix well.
- 8 Cover and cook on low heat until the mutton is tender, stirring occasionally.
- 9 Once the mutton is cooked, increase the heat to medium-high and let the moisture evaporate, stirring continuously.
- 10 Add garam masala and lemon juice. Mix well and cook for another 2-3 minutes.
- 11 Garnish with chopped coriander leaves before serving.
Tips
For a richer flavor, use freshly ground spices and add a few whole spices like cinnamon and cloves while sautéing the onions.
