Ingredients
| 1 cup | chana dal |
| 2 tablespoons | rice flour |
| 1 medium | onion, finely chopped |
| 2 | green chilies, finely chopped |
| 1 teaspoon | fennel seeds |
| 1 teaspoon | ginger, grated |
| 10 | curry leaves, chopped |
| 1 pinch | asafoetida |
| — | salt to taste |
| — | oil for deep frying |
Instructions
- 1 Wash and soak the chana dal in water for 2 hours.
- 2 Drain the water completely and grind the dal coarsely without adding any water.
- 3 Transfer the ground dal to a mixing bowl.
- 4 Add rice flour, chopped onion, green chilies, fennel seeds, grated ginger, curry leaves, asafoetida, and salt to the dal.
- 5 Mix everything well to form a dough-like consistency.
- 6 Heat oil in a deep frying pan over medium heat.
- 7 Take small portions of the mixture, shape them into flat discs, and gently slide them into the hot oil.
- 8 Fry the vadas in batches until they turn golden brown and crispy on both sides.
- 9 Remove the vadas from the oil and drain excess oil on paper towels.
- 10 Serve hot with coconut chutney or tea.
Tips
Ensure the oil is hot enough before frying to make the vadas crispy.
