Ingredients

1 cup chana dal
2 tablespoons rice flour
1 medium onion, finely chopped
2 green chilies, finely chopped
1 teaspoon fennel seeds
1 teaspoon ginger, grated
10 curry leaves, chopped
1 pinch asafoetida
salt to taste
oil for deep frying

Instructions

  1. 1 Wash and soak the chana dal in water for 2 hours.
  2. 2 Drain the water completely and grind the dal coarsely without adding any water.
  3. 3 Transfer the ground dal to a mixing bowl.
  4. 4 Add rice flour, chopped onion, green chilies, fennel seeds, grated ginger, curry leaves, asafoetida, and salt to the dal.
  5. 5 Mix everything well to form a dough-like consistency.
  6. 6 Heat oil in a deep frying pan over medium heat.
  7. 7 Take small portions of the mixture, shape them into flat discs, and gently slide them into the hot oil.
  8. 8 Fry the vadas in batches until they turn golden brown and crispy on both sides.
  9. 9 Remove the vadas from the oil and drain excess oil on paper towels.
  10. 10 Serve hot with coconut chutney or tea.

Tips

Ensure the oil is hot enough before frying to make the vadas crispy.
