Ingredients

1 cup all-purpose flour
1 cup ripe bananas, mashed
1/4 cup semolina
1/2 cup sugar
1/4 teaspoon fennel seeds
1/4 teaspoon cardamom powder
1/2 cup milk
1 pinch salt
as needed water
as needed ghee or oil for frying
1/4 cup chopped nuts (optional)

Instructions

  1. 1 In a large mixing bowl, combine mashed bananas, all-purpose flour, semolina, sugar, fennel seeds, cardamom powder, and a pinch of salt.
  2. 2 Gradually add milk and mix well to form a smooth batter. The consistency should be similar to pancake batter.
  3. 3 If the batter is too thick, add a little water to adjust the consistency.
  4. 4 Cover the batter and let it rest for about 15-20 minutes.
  5. 5 Heat ghee or oil in a frying pan over medium heat.
  6. 6 Pour a small ladleful of batter into the hot oil and fry until golden brown on both sides.
  7. 7 Remove the malpua from the pan and drain excess oil on paper towels.
  8. 8 Repeat the process with the remaining batter.
  9. 9 Garnish with chopped nuts if desired and serve warm.

Tips

For a richer flavor, use ghee instead of oil for frying.
