1 inch | Cinnamon stick |

2 cups | Onion , finely sliced |

1 tablespoon | Ginger-garlic paste |
|
1 teaspoon | Turmeric powder |
|
2 teaspoons | Red chili powder |
|
1 teaspoon | Coriander powder |
|
1 cup | Yogurt , whisked |
|
2 tablespoons | Cilantro , chopped |

1 teaspoon | Garam masala |

Instructions
- 1 Heat mustard oil in a heavy-bottomed pan until it begins to smoke slightly.
- 2 Add cumin seeds, bay leaves, black cardamoms, and cinnamon stick. Sauté for a few seconds until aromatic.
- 3 Add sliced onions and cook until they turn golden brown.
- 4 Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears.
- 5 Add mutton pieces and cook on high heat until they are browned on all sides.
- 6 Reduce the heat and add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- 7 Add whisked yogurt and stir continuously to prevent curdling.
- 8 Pour in water and bring the mixture to a boil. Cover and simmer on low heat until the mutton is tender, about 30-40 minutes.
- 9 Once the mutton is cooked, add garam masala and chopped coriander leaves. Mix well and cook for another 5 minutes.
- 10 Serve hot with rice or Indian bread.
Tips
For a richer flavor, marinate the mutton with yogurt and spices for an hour before cooking.
