Ingredients

2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 tablespoon active dry yeast
3/4 cup warm water
2 tablespoons olive oil
1/2 cup za'atar spice mix

Instructions

  1. 1 In a large bowl, combine the flour, salt, and sugar.
  2. 2 Dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.
  3. 3 Add the yeast mixture and 2 tablespoons of olive oil to the flour mixture.
  4. 4 Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  5. 5 Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. 6 Preheat the oven to 475°F (245°C).
  7. 7 Divide the dough into 2-3 equal parts and roll each into a round flatbread about 1/4 inch thick.
  8. 8 In a small bowl, mix the za'atar spice mix with 1/4 cup olive oil to form a paste.
  9. 9 Spread the za'atar mixture evenly over each piece of dough.
  10. 10 Place the prepared dough on a baking sheet and bake for 8-10 minutes or until the edges are golden brown.
  11. 11 Remove from the oven and let cool slightly before serving.

Tips

For a softer crust, cover the baked manaqeesh with a clean kitchen towel immediately after they come out of the oven.
