Ingredients
| 2 cups | all-purpose flour |
| 1 teaspoon | salt |
| 1 teaspoon | sugar |
| 1 tablespoon | active dry yeast |
| 3/4 cup | warm water |
| 2 tablespoons | olive oil |
| 1/2 cup | za'atar spice mix |
Instructions
- 1 In a large bowl, combine the flour, salt, and sugar.
- 2 Dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.
- 3 Add the yeast mixture and 2 tablespoons of olive oil to the flour mixture.
- 4 Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- 5 Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
- 6 Preheat the oven to 475°F (245°C).
- 7 Divide the dough into 2-3 equal parts and roll each into a round flatbread about 1/4 inch thick.
- 8 In a small bowl, mix the za'atar spice mix with 1/4 cup olive oil to form a paste.
- 9 Spread the za'atar mixture evenly over each piece of dough.
- 10 Place the prepared dough on a baking sheet and bake for 8-10 minutes or until the edges are golden brown.
- 11 Remove from the oven and let cool slightly before serving.
Tips
For a softer crust, cover the baked manaqeesh with a clean kitchen towel immediately after they come out of the oven.
