Ingredients
| 1 cup | rice flour |
| 1 cup | water |
| 1 pinch | salt |
| 1 cup | grated coconut |
| 1/2 cup | jaggery |
| 1/4 teaspoon | cardamom powder |
| 1 teaspoon | ghee |
Instructions
- 1 In a pan, bring 1 cup of water to a boil and add a pinch of salt.
- 2 Slowly add the rice flour to the boiling water, stirring continuously to avoid lumps.
- 3 Cook the mixture on low heat until it forms a dough-like consistency.
- 4 Remove from heat and let it cool slightly, then knead into a smooth dough.
- 5 In another pan, melt the jaggery with a tablespoon of water until it dissolves.
- 6 Add grated coconut and cardamom powder to the melted jaggery, cooking until the mixture thickens slightly.
- 7 Take small portions of the rice dough and flatten them into small discs.
- 8 Place a spoonful of the coconut-jaggery filling in the center of each disc.
- 9 Fold the discs over to form semi-circles and seal the edges well.
- 10 Steam the filled pithas in a steamer for about 15-20 minutes until cooked through.
- 11 Brush the steamed pithas with ghee before serving.
Tips
Ensure the dough is not too dry; it should be pliable enough to shape without cracking.
