Ingredients

1/2 cup mandua (finger millet) flour
1/4 cup rice
4 cups milk
1/2 cup sugar
1/4 teaspoon cardamom powder
10-12 cashew nuts
10-12 almonds
10-12 raisins
1 tablespoon ghee

Instructions

  1. 1 Wash the rice thoroughly and soak it in water for about 20 minutes.
  2. 2 In a thick-bottomed pan, bring the milk to a boil.
  3. 3 Drain the soaked rice and add it to the boiling milk.
  4. 4 Cook the rice in the milk on a low flame until it is soft and the milk thickens, stirring occasionally.
  5. 5 In a separate pan, heat ghee and fry the cashew nuts, almonds, and raisins until golden. Set aside.
  6. 6 Once the rice is cooked, add the mandua flour to the milk and rice mixture, stirring continuously to avoid lumps.
  7. 7 Add sugar and cardamom powder to the kheer and mix well.
  8. 8 Let the kheer simmer for another 10 minutes, stirring occasionally.
  9. 9 Add the fried nuts and raisins to the kheer and mix well.
  10. 10 Serve warm or chilled as desired.

Tips

Ensure to stir continuously after adding mandua flour to prevent lumps.
