Ingredients
| 1/2 cup | mandua (finger millet) flour |
| 1/4 cup | rice |
| 4 cups | milk |
| 1/2 cup | sugar |
| 1/4 teaspoon | cardamom powder |
| 10-12 | cashew nuts |
| 10-12 | almonds |
| 10-12 | raisins |
| 1 tablespoon | ghee |
Instructions
- 1 Wash the rice thoroughly and soak it in water for about 20 minutes.
- 2 In a thick-bottomed pan, bring the milk to a boil.
- 3 Drain the soaked rice and add it to the boiling milk.
- 4 Cook the rice in the milk on a low flame until it is soft and the milk thickens, stirring occasionally.
- 5 In a separate pan, heat ghee and fry the cashew nuts, almonds, and raisins until golden. Set aside.
- 6 Once the rice is cooked, add the mandua flour to the milk and rice mixture, stirring continuously to avoid lumps.
- 7 Add sugar and cardamom powder to the kheer and mix well.
- 8 Let the kheer simmer for another 10 minutes, stirring occasionally.
- 9 Add the fried nuts and raisins to the kheer and mix well.
- 10 Serve warm or chilled as desired.
Tips
Ensure to stir continuously after adding mandua flour to prevent lumps.
