Ingredients

1 cup ripe mango pulp
1 cup whole milk
1/4 cup granulated sugar
1 tablespoon gelatin powder
1/4 cup warm water
1/2 cup heavy cream
fresh mint leaves for garnish

Instructions

  1. 1 In a small bowl, dissolve the gelatin powder in warm water and let it sit for about 5 minutes until it blooms.
  2. 2 In a saucepan, combine the mango pulp, whole milk, and granulated sugar. Heat gently over medium heat, stirring until the sugar dissolves completely.
  3. 3 Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  4. 4 Allow the mixture to cool slightly, then gently fold in the heavy cream.
  5. 5 Pour the mixture into serving bowls or ramekins and refrigerate for at least 3 hours or until set.
  6. 6 Garnish with fresh mint leaves before serving.

Tips

For a richer flavor, use fresh mangoes to make the pulp instead of canned.
