Ingredients

Chive 1 bunch Chive , chopped
Pork 200 grams Pork , sliced
Onion 1 medium Onion , sliced
Garlic 2 cloves Garlic , minced
mustard oil 2 tablespoons Mustard oil
turmeric powder 1 teaspoon Turmeric powder
red chili powder 1 teaspoon Red chili powder
salt Salt , to taste

Instructions

  1. 1 Wash the Maroi Nakuppi thoroughly and chop it into 1-inch pieces.
  2. 2 Heat mustard oil in a pan over medium heat until it starts to smoke.
  3. 3 Add the sliced onions and minced garlic, sauté until the onions turn translucent.
  4. 4 Add the sliced pork to the pan and stir-fry until it is browned on all sides.
  5. 5 Sprinkle turmeric powder, red chili powder, and salt over the pork, mixing well to coat the pieces.
  6. 6 Add the chopped Maroi Nakuppi to the pan and stir to combine with the pork and spices.
  7. 7 Cover the pan and let it cook on low heat for about 10-15 minutes, stirring occasionally, until the pork is tender and the flavors are well combined.
  8. 8 Remove the lid and increase the heat to medium-high, stir-frying for another 2-3 minutes to evaporate any excess moisture.
  9. 9 Serve hot with steamed rice.

Tips

For a vegetarian version, replace pork with diced potatoes or mushrooms.
