Ingredients
| 1 bunch | maroi nakuppi (Chinese chives) |
| 200 grams | pork, sliced |
| 1 medium | onion, sliced |
| 2 cloves | garlic, minced |
| 2 tablespoons | mustard oil |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| — | salt to taste |
Instructions
- 1 Wash the Maroi Nakuppi thoroughly and chop it into 1-inch pieces.
- 2 Heat mustard oil in a pan over medium heat until it starts to smoke.
- 3 Add the sliced onions and minced garlic, sauté until the onions turn translucent.
- 4 Add the sliced pork to the pan and stir-fry until it is browned on all sides.
- 5 Sprinkle turmeric powder, red chili powder, and salt over the pork, mixing well to coat the pieces.
- 6 Add the chopped Maroi Nakuppi to the pan and stir to combine with the pork and spices.
- 7 Cover the pan and let it cook on low heat for about 10-15 minutes, stirring occasionally, until the pork is tender and the flavors are well combined.
- 8 Remove the lid and increase the heat to medium-high, stir-frying for another 2-3 minutes to evaporate any excess moisture.
- 9 Serve hot with steamed rice.
Tips
For a vegetarian version, replace pork with diced potatoes or mushrooms.
