Ingredients

1 cup masoor dal (red lentils)
3 cups water
1 tbsp mustard oil
1 tsp panch phoron (Bengali five spice)
1 medium onion, finely chopped
1 medium tomato, chopped
1 tsp turmeric powder
1 tsp red chili powder
salt to taste
2 green chilies, slit
2 tbsp fresh coriander leaves, chopped

Instructions

  1. 1 Rinse the masoor dal under running water until the water runs clear.
  2. 2 In a pot, combine the rinsed dal with 3 cups of water and bring it to a boil.
  3. 3 Add turmeric powder, red chili powder, and salt to the boiling dal.
  4. 4 Lower the heat and let it simmer until the dal is cooked and soft, about 20 minutes.
  5. 5 In a separate pan, heat mustard oil over medium heat.
  6. 6 Add panch phoron to the hot oil and let it sizzle for a few seconds.
  7. 7 Add the chopped onions and sauté until they turn golden brown.
  8. 8 Add the chopped tomatoes and cook until they soften.
  9. 9 Add the slit green chilies and sauté for another minute.
  10. 10 Pour the onion-tomato mixture into the cooked dal and stir well.
  11. 11 Simmer the dal for another 5 minutes to blend the flavors.
  12. 12 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, add a teaspoon of ghee on top before serving.
